Grass cheese is a young Gouda cheese made from the first milk after cows return to eating fresh grass. This organic grass cheese is briefly matured and available only for a limited time.
Grass cheese is usually available from late May or early June. For grass cheese 2026, the timing also depends on the weather and the start of the grazing season. Once the organic spring milk is available, Hooidammer grass cheese is produced.
